Sardinia is the instalment in this series most worth clearing a Monday for, because it is the one most people know least. The island’s cooking owes as much to its interior, shepherds, not fishermen, as it does to the coastline everyone pictures.

Paski runs one region per Monday with the menu held inside that region’s borders, and Sardegna gives the kitchen more room than most to show something unfamiliar.
