Sicily closes the year, and it is the right note to end on. No Italian region carries more in its cooking, Greek, Arab, Norman and Spanish rule all left something behind on the plate, and none of it has been tidied away.

The format holds: one Monday, one region, a menu that does not stray. After a year of working north to south, the kitchen arrives somewhere that barely reads as Italian at all.
